The blend of grass-fed cottage cheese, mozzarella, cheddar and parmesan creates a luscious, melt-in-your-mouth texture, while the spinach adds a fresh, earthy balance that keeps every bite light yet indulgent.

Ingredients
Lasagna & Cheese Layers:
Lasagna noodles, cooked per package instructions
2 Packages grass-fed cottage cheese
3 Packages grass-fed sliced cheddar cheese
3 Packages grass-fed mozzarella cheese
1 Cup fresh or frozen spinach
Meat Sauce:
2 lbs grass-fed beef
1 Large onion, chopped
4 Cloves garlic, minced
2 Sweet bell peppers, chopped
4 Oz organic tomato paste
1 Can organic tomato sauce
1 Can organic crushed tomatoes
3 Tbsp extra virgin olive oil
1 Tbsp fennel
1 Tbsp oregano
1 Tbsp garlic powder
1 Tbsp onion powder
1.5 Tbsp sea salt
2 Tbsp pepper
¼ Cup fresh parsley, chopped
Preparation
Step 1 Prepare Ingredients:
Cook lasagna noodles until al dente. Drain and lay on a parchment-lined tray.
If using frozen spinach, thaw and squeeze out excess water. Chop fresh spinach if using.
Chop onions and bell peppers; mince garlic.
Step 2 Make the Meat Sauce:
Heat 3 tbsp olive oil in a large skillet over medium heat.
Sauté onion until translucent, about 4–5 minutes.
Add garlic, fennel, oregano, garlic powder, and onion powder, and cook 30–45 seconds until fragrant.
Add grass-fed beef and brown, breaking it up with a spoon.
Stir in tomato paste and cook 1–2 minutes.
Add tomato sauce, crushed tomatoes, and bell peppers.
Season with salt, pepper, and half of the parsley. Simmer 15–20 minutes until sauce thickens slightly.
Step 3 Prepare Cheese Mixture:
In a bowl, combine cottage cheese with spinach. Add a pinch of salt to taste.
Step 4 Assemble Lasagna:
Preheat oven to 375°F.
Lightly grease a 9x13-inch baking dish.
Spread a thin layer of meat sauce on the bottom.
Layer noodles, then cottage cheese-spinach mixture, then cheddar and mozzarella slices, then more meat sauce.
Repeat until ingredients are used, finishing with a layer of cheese on top.
Step 5 Bake:
Bake for 30– 45 minutes until the top is golden and bubbly.
Let rest 10–15 minutes before slicing.
Step 6 Garnish & Serve:
Sprinkle remaining fresh parsley over the top before serving.
Serve with fresh microgreens for added nutrients.
